Thumbs up I just made the most kick-assed salsa EVAR

Call me gay but for my first attempt at making salsa, I'd say I did DAMN GOOD. Wish I could share some with you dudes

Ingredients were 3 quarts of chopped/skinned tomatoes (grown in our mini-garden outside), onions, garlic, cumin (hehe..), oregano, cilantro, tomato paste, salt and pepper, 2 cups of lemon juice, jalepenos, and then boiled it on the stove for a half hour. Jenel put it all in a bunch of canning jars, we set aside a little for ourselves, holy crap this is the best salsa ever We made 14 pints of it

I'm impressed with myself Seriuosly, I can't believe how good it came out. Goes awesome with some Tostitos chips and a beer

Sounds pretty good to me, about how much do you think all of the materials cost you?? under 20 bones i'm assuming especially considering you grew the tomatoes

Well minus the tomatoes it cost us $26 for the jars and ingredients.

3 quarts of tomatoes skinned and chopped

3 jalepenos chopped finely (put more in if you want it spicier)
5 cloves of garlic, chopped finely
2 Tablespoons of ground Cumin
1.5 Tablespoons of Oregano
Chopped cilantro (I chopped up maybe a 1/4 cup)
24 ounces of tomato paste
1 tablespoon salt
1 tablespoon sugar
1 teaspoon pepper

Cooks in a pot at a simmer for a half hour, then you put them in jars. We used pint jars that you then boil under water in a big pot for 15 minutes, then leave them out at room temp to cool.

roughly how many tomatoes is that. could you substitute with canned peeled tomatoes?

Black94GT - I used Roma tomatos (not the round ones, they're longer than the normal beefstake tomatos and do better in salsas), we went through about 40 of them. From what I read online, they really suggest using fresh tomatos. Maybe because of the preservatives in canned tomatos? I don't know. I don't see how canned peeled and chopped tomatos would be so bad, just get enough to fill 3 quarts which is usually enough to fill a 12" wide mixing bowl about 9" deep. We just wanted to use up ours that were growing because we had WAY MORE than we thought we would when we planted them in March. We have 8 GIANT plants, they come up to my neck and I'm 6'1". We've still got a lot left over and Jenel wants to make sauce with them. Then there is ANOTHER group that are green on the plants right now that we're probably just going to make more salsa with in a few weeks.

I'm tellin you guys, this salsa is the shiit. I had some on my sausage and egg sandwich this morning for breakfast .

I like my salsa a little hotter, usually (habanero hot); however, sometimes a mild salsa is damn good too. My sister made some mango salsa before that was very good.
